LOVE these crumpets!.
I had not had them for years- since I was younger and they were always a special treat.
After trying them again now as an adult, I am addicted.
I toasted my first batch in the toaster- and covered in lashings of butter and golden syrup- the trick is to get the butter on while they are still quite warm so it melts through all the layers, resulting in a really moist, decadent treat with butter and syrup all through!
I was surprised to realize that nutritionally, they are not as bad as what I had always thought. so my next batch i put in the oven for a couple of minutes under fan grill at 180degrees. it warmed them up and made them lush and soft- i think this is definitely the best way to heat them! i topped with mashed avocado, a poached egg and dukkha- an absolute winner!
Can’t wait to experiment with more topping ideas!
