A milky and buttery taste with notes of tropical fruit and green peppers which is derived from the natural, red smear on the rind and the albino blue mould inside. As Marquis matures, the taste and flavour of the read smear become slightly sharper, while the cheese itself gets more character. Castello Marquis is a truly special cheese. Its taste and flavour are intense and piquant. Thanks to the unique production method, the mould culture develops from the inside of the cheese, whereas the red smear does so from the outside. Its consistency is creamy.

This is a favorite. Smeared on a wafer cracker this is an aromatic full tasting soft cheese. Great on its own or with a light deli meat!! Top cheese!!

At last an orange rind, soft cheese with a real French taste about it. And its made in NZ! If you like soft cheese with a tonne of flavour, rich and creamy (& a nice colour change in a cheese platter), then this is the one.
