Easy to make pudding for those cold winter nights. Recipe courtesy of one of our Black Box Members. Featuring Golden Crumpet Rounds.

Ingredients
- 4 eggs
- 100g sugar
- 400ml milk
- 400ml cream
- 1 tsp vanilla essence
- 100ml maple syrup
- 8-10 crumpets, buttered on rough side and halved
- 100g raisins
- 100g walnuts
Method

Whisk the eggs, sugar, milk, cream, vanilla and maple syrup in a bowl until smooth. Sieve the mixture into a jug.

In a 2 litre baking dish, arrange the crumpets, scattering over raisins and walnuts in between.

Pour over the custard mixture. Let it sit for 30 minutes while you heat the oven to 170 C.

Bake for 50-55 minutes, until the top is golden and the custard is set.

So yummy and a nice change for a bread and butter pudding the kids enjoyed it with a scoop of vanilla ice cream
