Garlic Mushrooms with Whipped Feta on Muffins

This quick and tasty brunch recipe also doubles as a hearty snack. Made with Tip Top Cafe English Muffins, you won’t regret a single bite.

Ingredients

  • 100 g feta
  • 100 g cream cheese
  • 100 g sour cream
  • Zest of 1 lemon
  • 2 Tbs olive oil
  • 2 tsp butter
  • 1 tsp minced garlic
  • 200 g mushrooms, thickly sliced
  • Fresh thyme
  • 4 Tip Top English muffins
  • Halved cherry tomatoes
  • Balsamic vinegar syrup

Method

Place feta, cream cheese, sour cream and zest in a food processor. Whizz until smooth.

Heat up oil and butter in a frying pan, add garlic and fry for a minute. Add mushrooms and cook until golden finish off with a sprinkling of fresh thyme leaves.

Split and toast the English muffins.

Spread each half with whipped feta, then top with mushrooms and cherry tomatoes.

Drizzle with Balsamic vinegar syrup.
