Meat-Free Portabello Mushroom Cheeseburger

Ingredients
- 4 large Meadow Mushrooms Portabellos
- 10g butter/olive oil
- 40g grated cheese
- 4 tsp sweet chilli relish
- Salad leaves
- 4 slices tomato
- Sliced red onion
- 4 burger buns/ciabatta rolls
Method

Pre-heat grill to high. Remove the stalk from mushrooms and lay them out in a single layer on a baking tray, gills facing up

Top with dot of butter/drizzle over oil and sprinkle over grated cheese. Grill for 5 mins till cooked, mushrooms should be soft and juicy

Slice buns in half, butter (optional) and warm in oven.

Assemble burger with salad, tomato and onion, then mushrooms, relish, top with bun and serve.

When preparing your mushrooms, use a dry cloth or slightly damp paper towel to brush off any dirt. Don’t submerge them in water. Mushrooms act like a sponge so water will be absorbed, which causes the final cooked mushrooms to be squeaky instead of flavourful and browned.
