Ingredients
- 2 tablespoons butter or olive oil
- 250g Meadow Mushrooms, any variety
- 150mls cream or sour cream or crème fraiche
Method
1
Slice or quarter your mushrooms.
2
Heat olive oil or butter in a frying pan over a medium heat and sauté the mushrooms with a sprinkle of salt to your liking, being sure not to overcrowd the pan.
3
Once cooked, stir through cream, sour cream or crème fraiche and heat gently before serving. Keep an eye on it, you don’t want it to boil. Depending on the consistency you’re after, add more or less cream.

Serve as a meal on its own on toast, or as a side dish at breakfast or poured over steak.
