Classic Guacamole

Not only is this guacamole uber tasty, it’s easy to make, fool-proof and ready in just 10 minutes!

Ingredients

  • ½ small red onion
  • 1-2 fresh red chillies, deseeded
  • 3 ripe avocados
  • 1 bunch of fresh coriander
  • 6 ripe cherry tomatoes
  • 2 limes
  • 1 tbsp extra virgin olive oil
  • Salt
  • Black Pepper

Method

On a large board, roughly chop the onion and red chilli. If you’re using fresh chillies make sure to deseed them to reduce the spiciness.

Destone the avocados and add in the flesh onto the board.

Start chopping it all together until fine and well combined

Roughly chop the coriander leaves and add the tomatoes. Continue chopping it all together.

Add in the juice of 1 lime and a tablespoon of olive oil. Season to taste with salt and pepper and more lime juice, if needed.

Finely chop and deseed remaining chillis and scatter over top for extra spice. Garnish with coriander leaves and serve.
