Ingredients
- 3 cups Harraways Traditional Wholegrain Oats
- ½ cup sliced almonds
- ¼ cup linseed
- ¼ cup pumpkin seeds
- ¼ cup coconut flakes
- ¼ teaspoon ginger
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- ⅓ cup maple syrup
- 2 teaspoons of vanilla extract
- ¼ cup goji berries
- ¼ cup golden sultanas
- ¼ cup chopped pitted dates
- ¼ cup apricots
- ¼ cup cacao nibs (optional)
Method

In a large mixing bowl combine oats, almonds, linseed, pumpkin seeds, coconut, spices and salt.

Add the maple syrup and vanilla to the dry ingredients and mix.

Line a large shallow roasting pan with baking paper. Spread mixture evenly across the pan.

Bake at 190C for 12-15 minutes stirring every 3 or 4 minutes until crisp and golden.

Remove from oven and let mixture cool to room temperature.

Add dried fruit and cacao nibs if desired.

Store in an airtight container. This muesli is best eaten within a month of being made.
